Avo toast with mushrooms and vegan cheese
I’m not sure if it’s the weather or my body, but I’ve been feeling like a sloth lately. I can’t shake out of the need to just slow down. I have so many ideas in my mind for recipes but I just want to eat all the comfort food at the moment. Included is this epic avo toast with sautéed mushrooms, micro greens, herbs and MELTED CHEESE!!! I’m telling you it was heaven. Maybe almost as good as my pizza bianca but like a toast version. I could live on this every day 😃

A slice of sourdough bread
Sautéed mushrooms (in a bit of EVOO, salt, garlic and onion powder)
Handful of microgreens
Flowers from basil and thyme
Everything but the bagel seasoning
1 avocado, ripe and mashed
Melting vegan cheese (I used vegcheese not sponsored!)
Toast your bread with your cheese until it bubbles
Mash your avocado and add in your salt, lemon and everything but the bagel seasoning
Sautee your mushrooms
Build your bread with mashed avocado, mushrooms and add your herbs and micro greens.
