Chickpea, Tomato & Broccoli Curry by janetsmunchmeals 🌿 A quick, comforting, and easy curry for all your cravings! Check out the recipe below!
1 cup finely chopped onion
1 tbsp oil
3-4 garlic cloves minced
1 cup sliced cherry tomatoes
1 tsp chili powder
1 tsp kosher salt
1/2 tsp pepper
2 tsp ground coriander
1 tsp cumin
1 tbsp curry powder
1 tsp garlic powder
1 1/2 cups crushed tomatoes
2 15 oz. cans chickpeas
2 cups broccoli florets
1 15 oz. can coconut milk

Add onion and oil to a large skillet and cook over medium heat for 5 minutes, stirring often. Add sliced cherry tomatoes, minced garlic and all the seasonings. Cook for 3 minutes, stirring often. Add crushed tomatoes, drained (and rinsed) chickpeas, broccoli and coconut milk. Stir, cook at a gentle simmer for 10 minutes or until broccoli is tender.
