Coconut cauliflower pasta by earthofmariaa 🧡
10 oz pasta of choice
2 cups cauliflower florets
1 cup coconut milk
3 tbsp nutritional yeast
Juice of 1/2 lemon
1/2 tsp salt
Cook the cauliflower for around 12-15 minutes, until tender. Meanwhile, in a different pan cook the pasta according to packaging instructions. When the cauliflower is cooked, drain and rinse it and transfer it to a blender together with the coconut milk, nutritional yeast, lemon juice and salt. Blend until smooth, then mix together with drained pasta and serve.
