Crispy Baked Smashed Potatoes topped with Vegan pesto and parsley by plantbased_food_and_travel 🀀 Loaded with a side of steamed asparagus and a drizzle of tahini 😍. Is it your perfect dinner? Recipe below:

For the smashed potatoes:
1 kg small potatoes.
Olive oil.
Sea salt.
Toppings of your choice.

Instructions:
Bring water to a boil, add the cleaned potatoes and cook them for about 25-30 minutes until they are soft (knife/fork test).

Preheat the oven to 220 degrees celcius, put the cooked potatoes on a baking tray, smash them down with a potato masher or simply a bowl, add a drizzle of olive oil and a pinch of sea salt on the top of each potato and bake them for about 30 minutes until crispy and lightly browned.

Put them on a plate and top with whatever you want. Just get creative. Today I used vegan pesto and parsley!
