VEGAN POKE BOWL WITH VEGAN SMOKED “SALMON” from leeksnbeets

IN THE BOWL 👉🏻 Red cabbage, peanuts, sliced radish, sliced cucumber, shelled edamame, avocado, quinoa, vegan smoked “salmon” and lemongrass tamarind tofu with spring onion, cayenne pepper and toasted and black sesame seeds for toppings.

❇️ FOR THE VEGAN SMOKED “SALMON” ⤵️
🔹3-4 large carrots, cut into strips using a mandolin or a peeler
🔹2 tbsp neutral oil
🔹1½ tbsp soy sauce
🔹1 tbsp rice wine vinegar
🔹1 tsp toasted sesame oil
🔹1 tsp maple syrup
🔹1 tsp liquid smoke
🔹½ tsp each S&P
❇️ METHOD ⤵️
🔹Start by steaming the carrots about 5 mins or so then let cool to room temp.
🔹Meanwhile whisk together the rest of the ingredients.
🔹Add the carrots to the marinade, stir then transfer to an airtight container and refrigerate overnight. Enjoy in a poke bowl or in a sandwich/bagel!
