To make this, cut one medium tomato, 4 baby cukes, 1 red pepper in more or less same size pieces. Mince up about 2 big bunches of parsley really fine and add it to the bowl 😁. Add a handful of kalamata olives and 1/2-3/4 cup optional cubed vegan feta. Dress it all with 3 tbsp olive oil, 2 tbsp rice wine vinegar, 1 tbsp lemon juice, 1/2 tsp salt {more to taste} and 2 tbsp maple syrup {shake or stir together first}. Toss it all together and enjoy as is, or serve on a bed of fresh greens OR for a complete meal, with freshly cooked quinoa.
