Roasted Adobo Chipotle Chickpeas
1 can chickpeas, rinsed and drained
1/2 tsp adobo
1/4 tsp chipotle powder
Salt and pepper based on preference
Place chickpeas in a bowl and dab with a clean towel or paper towel to remove excess moisture from chickpeas. Add seasonings and toss together. Add chickpeas to an airfryer at 370F for 15mins OR heat oven to 400F and roast for 10 minutes, stir half way through and roast for an additional 10-15 minutes. Once cooked just allow to cool completely so they crisp up.
Serve with red lettuce, minced basil, sliced cherry tomatoes, avocado, blackberries and hemp seeds. Just drizzled a little fruit infused vinegar, but balsamic vinegar works really well too.
